Healthy Oat, Coconut, Walnut Cookies

I am always experimenting and adding new desserts and treats that are healthy yet flavorful for my husband. We are very health conscious so my recipes are very low-sugar, and many times protein and fiber packed.  These oat, coconut, and walnut cookies are part of my new collection for low-sugar treats and can be easily adapted to be gluten free. By swapping out excess sugar for naturally sweet ingredients, I’ve created a cookie that feels like a treat but nourishes like a healthy snack, guilt free! Crunchy walnuts, hearty oats and coconut make every bite wholesome and satisfying- proof that mindful baking can be just as comforting as the classics.

***** Bakers tip: When I look at any recipe, I immediately cut the sugar down to at least a third. If you taste as you go you will find the recipe is just fine if not better without all the excess sugar. Yes, baking is a science, however if you adhere to the basic principles of the recipe ( you may need to add a bit of flour, or in this case oats, or water here and there) the outcome will be the same.  Use your imagination…..

Healthy Oat, Coconut, Walnut Cookies    yield approx. 20 cookies depending on scoop size

Cream together:

1 stick room temp butter

1/3 c. brown sugar ( can substitute honey, 3- 4 T, taste as you add)

1 room temp egg

1 t. vanilla

Add:

2 & 1/2 c. oats

1/4 c. flour ( can substitute with 1/4 c. oats if you want gluten free)

1/2 t. baking soda

1/4 t. salt

1/2 – 3/4 c. chopped walnuts

1/2 – 3/4 c. unsweetened shredded coconut

1/2 c. raw pumpkin seeds ( optional)

2-3 T. water, added 1 at a time to bind dough

Preheat oven to 350 degrees

Get ready…. two baking sheets lined with either parchment paper or silpats, scoop each cookie with room to spread on both pans

Flatten each cookie using a fork dipped in water, this will allow cookies to get brown and nicely crisped

Bake for 10 minutes and then rotate pans in oven, bake for an additional 10 minutes. If you like extra crispy, turn off oven and leave then in an additional 5-10 minutes.  Remove, cool completely, cover and store.
